Nailed It! Momofuku Milk Bar’s Crack Pie

08.20.2018 by Leah // Leave a Comment

Something good finally came out of my binge-watching Netflix!  We made our first Crack Pie and just like that, it's now our instant favorite! I first learned about the Crack Pie when I watched an an episode at Chef's Table featuring Christina Tosi (of the Milk Bar fame) and there she made kwento about how the Crack Pie came to be.   It was just something she made out of the ... Happy 2015! How did your New Year celebration go?  AJ and I chose to spend it at home as usual (after dinner at my parents's house) and we celebrated the New Year with our homemade Chocolate Ganache Tart with Caramelized Apples on the side.  I posted a picture of this sweet ending to our fab 2014 over at my Instagram account (follow me @dbrightspot). We also made Roast ... READ MORE

Roast Chicken with Italian Sausage and Bread Stuffing

12.22.2014 by Leah // 7 Comments

Our sumptuous lunch today:  Roast Chicken with Italian Sausage and Bread Stuffing. The idea for this recipe came to me last Thanksgiving after seeing pictures and pictures of Stuffed Turkey in my Instagram feed.  So I looked it up online and saw this easy-to-do recipe for turkey stuffing at epicurious.com.  I waited for my Christmas leave at work to try the recipe (para ... Roast Pork Tenderloin

06.21.2014 by Leah // 2 Comments

Another cooking milestone for me:  baking my first roast pork using just 5 ingredients:  pork tenderloin, 2 kinds of seasonings, olive oil and salted butter!  My pegs were Patricia and Ree's roast beef recipes, but I used pork tenderloin instead of beef. Ree used Lawry's Seasoned Salt and McCormick's Lemon and Pepper seasoning salt as meat spice rub. I tried to look for ... READ MORE

My birthday month is almost over and lest I forget, here's the Gourmet Chicken Adobo recipe that I promised to share when I wrote about our Asahi convection oven (thanks to all your wonderful comments, by the way!) I got this adobo recipe from the same cookbook where I found the recipe for Roasted Chicken Stuffed with Cream of Mushroom - the Assumption Cookbook (Pearl ... READ MORE

02.23.2014 by Leah // 2 Comments

The hubby was in the mood for baking last Wednesday and made these delectable chocolate cupcakes with a twist (yummy!). He's also in the mood for another guest post here in the The Bright Spot, as there's an interesting story to tell behind these celebratory cupcakes that he made (no help from me this time, hehe!). Read on, and enjoy AJ's ... READ MORE

Baked Creamy Mushroom Chicken

It's been a while since I shared a Saladmaster recipe.  In case you don't know yet, I partnered up with my sis-in-law Juvvy 2 years ago so we can buy a Saladmaster cooking set for ourselves.   The set was a very expensive one, but we managed to fit it into our budgets by splitting the items in the set, thus splitting the cost too.  We got 3 items each.  Since then, I've been ... 01.14.2014 by Leah // 13 Comments

A lovely Tuesday to y'all! Now that our ants problem is gone (as in totally; there are no more ants in our kitchen counter top, yey!), we can talk about something sweet! Today's post is written by the hubby, AJ, who is more than happy to share with you  this simple chocolate cake that we made last December and became the "Star of our Noche Buena". But before you ... Hi Daddy! Lapit na ang birthday mo, and you will c Hi Daddy! Lapit na ang birthday mo, and you will celebrate it in heaven na ☁️☁️☁️ Pero kasama mo pa rin kami magce-celebrate. Same as last year, we will celebrate it at home dahil may #covid_19 pa rin. You will remember that last year, yours is the first birthday we celebrated in quarantine. I just came from Baguio (for work) and someone from our group tested positive. Hindi na tayo nakapagpa-picture dahil puro nasa #covid_19 ang attention natin. We miss you, daddy! I hope you like your flowers today, mas marami na green leaves kaysa flowers. Just the way you like it. 💚💚 #theoriginalplantito

I had my annual mammo exam yesterday at the new, b I had my annual mammo exam yesterday at the new, bigger and hotel-like Makati Medical Wellness Center at Ayala North Exchange. It's so spacious and so safe in there. I wore double masks (KN95 and fabric mask from @quins.ph) and my favorite scrub cap from @unisol.ph_ with buttons on both sides for the mask ear loops. It kept my ears from hurting and kept my hair intact too. Never mind if I look more like a nurse than a patient here 😁 Safety first over porma 😜
Taken in February last year just as Japan was star Taken in February last year just as Japan was starting to feel the effects of the #covid_19 pandemic. Hiroshima is a beautiful city and here I was able to take off my face mask because halos walang tao sa mga tourist sites that we went to. Hindi lang halata here but my hands were already burned because of too much washing with disinfectant alcohol 😬

So grateful to have visited this historic city in this extraordinary time.
