This was our fantabulous chicken dinner last night, paired with pesto macaroni pasta:
You all know my not-so-secret-anymore recipe for the pesto pasta (check it out here!) and as I forgot to stock on pasta noodles, we just bought whatever we could find at the supermarket. The smallest pack available happened to be the macaroni noodles, thus the awkward noodles + pesto sauce combination!
Anyway, the superstar in our meal last night was not the pasta, but the baked chicken which I discovered through my wedding Ninang (thank you, Mommy Caro!). The recipe is called Melt in Your Mouth Chicken by Bratzilla Roman. If you are familiar with the Yogurt Parmesan Chicken of the South Beach Diet and Mediterranean Diet – this is the recipe =)
Here’s how you can make your own Melt in Your Mouth Chicken (a.k.a. Baked Yogurt Parmesan Chicken):
In a small bowl, mix together the following ingredients:
- 1/2 cup parmesan cheese (use grated parmesan; not the powdered variety)
- 1 cup Greek yogurt – plain (we substituted this with Nestle’s Creamy Yogurt)
- 1 tsp garlic powder
- 1 1/2 tsp seasoning salt
- 1/2 tsp pepper
Here’s how it’ll look like after mixing together. If you want to give it more flavor, sprinkle more garlic powder and pepper.
Arrange chicken breasts (we had Bounty Fresh Chicken) in a baking tray then, using a spoon, spread the mixture over them. Don’t scrimp on the mixture, as this is the only thing that will add taste to your chicken!
Bake at 375 degrees for 40 minutes. In case you are using a convection oven (like us), you can add 10 minutes to your baking time to achieve that golden brown color of the chicken.
Ta-da! It’s amazing what a combination of simple ingredients can do for our chicken meat! This Baked Yogurt Parmesan Chicken was bursting with wonderful flavors that we couldn’t stop saying “Mmmmmm…” all throughout our meal.

You can bake the chicken at the prescribed temperature for 40 minutes or so. If using a convection/fan-assisted oven like we did, your cooking time may be a bit shorter. After that 40mins, we added more cheese toppings, and set the chicken to broil (heat coming from top heaters) for about 10minutes on the topmost rack to achieve the melted cheese look.
While waiting for the chicken to cook, you get plenty of time to get the pasta done.
Easy weekday dinner, I should say.
